How to Create Delicious Fruit Bellini Purees

Here's to Bellini season! Of course, every season is perfect for a Bellini, if we're being honest. We genuinely feel that adding a bit of fizz to festivities is essential. Because of this, we've whipped up a DIY guide on all things bubbly.

First things first: find a suitable workspace. Perhaps it's a table or a countertop. From here, create your own Bellini puree with a medley of stone fruits and berries. Simply blitz them in a food processor, strain, and add simple key ingredients like lemon juice or sweetener, if you so choose. Don't hesitate to add herbs for a touch of freshness.

Get your champagne bottles and glasses chilling, so they're perfectly frosty for your arriving guests. Arrange small bowls filled with a variety of berries and fruity slices for a festive and visually striking garnish. Feeling really festive and creative? Go ahead and toss in herbs, stir sticks or even tinsel drink stirrers for an extra sprinkle of Christmas charm.

Strawberry Mint (Serves 1)
  • 1/2 pint of strawberries, trimmed
  • 1 tablespoon of fresh lemon juice
  • 1 teaspoon of sugar
  • Mint leaves

Blackberry Basil (Serves 1)
  • 8 ounces of fresh blackberries
  • 1 tablespoon of fresh lemon juice
  • 1 teaspoon of sugar
  • Basil leaves

Peach Thyme (Serves 1)

  • 2 ripe peaches, seeded and diced
  • 1 tablespoon of fresh lemon juice
  • 1 teaspoon of sugar
  • Thyme sprigs

INSTRUCTIONS
  1. Place your fruit, lemon juice, and sugar in the bowl of a food processor fitted with a steel blade and process until smooth
  2. Press the mixture through a sieve and discard the fruit solids in the sieve
  3. Place 2 tablespoons of the puree into each champagne glass and fill with cold champagne or Prosecco
  4. Garnish with fresh herbs and fruit!
